Hello all, my new kitchen is being built at the moment, I currently
have a hot and cold feed going past it at the moment to my shed in the
form of flexible water pipe and push fit fittings, would it be within
regs if I just T off these and feed the sink in the new extension the
pipes will be buried 18" deep once completed?

Shouldn't be a problem.
Piping size is based on water fixture units. Kitchen sink is at 1 wfu for
hot & cold, so a 1/2" plastic water line should work w/o any problems.
Greatest restriction is in the fittings, so keeping the tee's and elbows to
a minimum will improve water flow.

When you say "flexible water pipe", do you mean PEX?
Depending on where you are, the 18" depth may be too shallow to be
below the frost line. Your local building code would govern that. Other
than that, there's noting wrong with teeing off a line.
