I have power next to the Pellet stove, but the location I want to put the
thermostat is back in the hallway. I could wire the thermostat, but I have
to drill through the brick to make it look good. I'm not looking for a
fancy thermostat, just something that switches a relay on and off at a set
temp.

If I read this right all you require is a dry contact closure via an RF
link. This is a simple job. There are inexpensive RF transmitters from
firms like Linear that will send a signal any time the remote thermostat
opens or closes a circuit. A matching RF receiver will transfer and release
its relay upon receipt of the appropriate RF signal.
Like all other things, the RF transmitter or receiver can fail so you should
consider installing a local (near the pellet stove, that is) backup
thermostat which will prevent the stove from running unchecked above some
maximum or staying off below some minimum temperature.
